Περίληψη:The present investigation proposes: to design a gastronomic tourist route of the Mulalillo parish, canton Salcedo, province of Cotopaxi to contribute to the valorization of the intangible cultural heritage; preparing an inventory of the intangible heritage in the parish's gastronomic sub-sector, systematizing it in the registration forms of the INPC instructive "National Inventory of Cultural Heritage" having as its first objective the gastronomic diagnosis of the Parish. In the second objective we will proceed to inventory the gastronomy resulting in a total of thirty-four dishes, of which twelve are fast food, which equal a percentage of 35% and twenty-two to typical plates which corresponds to 65%. we valued the state of vulnerability of each typical dish and as a final objective, a georeferenced map of the route was produced and the design in which it was established was defined as eighteen stops. Each of the sale locations had a distance of 10 km 578m and a duration of 5 hours 10 minutes.
