Summary:The current research report had as aim a Safeguard Plan for the traditional drink's elaboration from Pujili parish (La Matriz) Pujilí canton, Cotopaxi province. The Safeguarding Plan is a methodological management tool, what allows the strategies technical structuring, which in turn it makes up focused programs or projects to the existent different intangible cultural heritage's preservation. Inmaterial cultural heritage or intangible cultural heritage is UNESCO declaration's part and is defined as “the set of creatons based on a cultural community tradition expressed by a group. For the plan development,it focused the study on the traditional drinks from Pujilí parish (La Matriz), traditional drinks are those liquid preparations, what are cultural expressions part from a town, which has managed to build an identity, they are resources, what they transmit communication elements, and manifest both the traditions, cultural beliefs, worldview, production techniques, which give them to the preparations special characteristics, what are usually transmitted from generation to generation, the ingredients, which they are prepared, what are within an ancestral cultural historical context, which is part their food evolution, becoming a fundamental part their identity. The current research works based on the qualitative approach guidelines with their respective methodologies. For the aims elaboration,they were used the deductive, descriptive, ethnographic methods together with the INPC methodological guide, having as a result, the traditional beverages inventory from parish, information, what it was required for the safeguard plan preparation, likewise, it executed strategies stipulated ones in the plan according to the third proposed.
