סיכום:Evaluating the current status of the PROLACCI enterprise, was the proposal of this research, which makes fresh cheese in an artisan way. This research seeks to improve the quality by following and adhering to the ARCSA-DE-067-2015 requirements resolution as laid out by the National Agency for Regulation, Control and Sanitary Surveillance for the food industry. To meet such goal, production processes were analyzed through the gathering of relevant information to generate the respective diagrams of the production operation. Subsequently, the BPM checklist was applied, the function of which is to verify the parameters of compliance or non-compliance from the company, where different workplace parameters will be analyzed such as: the installations, equipment; raw materials and supplies, bottling and packaging; storing and quality control. The proposed study presents itself as a descriptive investigation since it specifies the company processes that are examined in quantitative and qualitative fashion. To that effect, several field investigative techniques were employed as well as bibliography. Once the percentage of the company’s compliance is obtained, the unmet requirements are studied. To accomplish this, Standardized Operating Procedures of Sanitation (SOPS) and the Standardized Operational Procedures (SOP) will be proposed which will avoid any cross contamination with the end of guaranteeing proper quality from the product to the costumer as well as help standardize the company’s processes through NTE INEN 1528:2012. Ultimately, it was concluded that the company presents certain particularities in the operation and control of the process since it lacks appropriate procedures that would standardize the operations even if the percentage of met-requirements is acceptable, according to the applied verification guide.
