Gaia:The mortiño is an Andean plant that is grown in the moors of Ecuador. This species, being cultivated in this area, does not have information about its characteristics, however, today it is trying to investigate and in the same way that it can be commercialized. This research tries to provide information about the compounds that this fruit presents, such as polyphenols and antioxidant capacity, as well as its phytochemical profile. Within the study it is expected that there will be presence of these compounds to not only contribute to the food part but also to the health part, since it has very good characteristics as a source of antioxidants that fight against free radicals that are present in the human body and are the cause of chronic diseases such as cancer, diabetes, cardiovascular diseases, cerebrovascular diseases, among others. Currently foods that have antioxidants are being studied to combat Alzheimer's, being these rich in vitamins, minerals that help strengthen the brain and that its development is positive. In the same way, the mortiño is a fruit that today is being used for the production of wines, jams, juices, flours and also for energy bars, it is considered a functional food.
