Izvleček:The present work was carried out in order to optimize the hydroalcoholic extraction process of the crude drug from the plant of “Sunfo” therefore, the plant was dehydrated in an oven for 4 hours at 40 ° C. The runs were established using the Desing Expert 8.0.6 program in which I determined 23 runs with different variables such as: ethanol concentration (60%, 75%, 90%), extraction time (6h, 15h and 24h) and temperature (30 ° C and 60 ° C). Sunfo being an aromatic plant has phenolic compounds that are made up of organic acids as antioxidants. According to the analysis of the phytochemical profile carried out, chemical compounds such as: flavonoids, triterpenes, quinones, saponins, alkaloids and reducing sugars stand out. By subjecting the crude drug to a hydroalcoholic solution, the content of total polyphenols and the antioxidant capacity of the different experimental runs with the different factors were determined. The numerical optimization process of the hydroalcoholic extraction was verified, by comparing the experimental values of total polyphenols (0.23mg / g) and antioxidant activity (825.3µmolFe2 + / g), with those obtained from the optimization of total polyphenols (0.20mg / g) and antioxidant activity (814.18µmolFe2 + / g). The values obtained through experimentation were higher than the values of the numerical optimization.
