To obtain the energizing drink, 8 treatments with two replicas were proposed. Proposing an arrangement of AxBxC factors under a DBCA in which factor A with two levels (concentration of raw materials),in factor B with two levels (type of sweetener) and in factor C with two levels (acidulant concentration), where a physicochemical analysis, proximal analysis and a chromatographic analysis were performed by means of these analyzes, the two replicas characteristics were evaluated such as pH, Brix degrees, acidity, nutritional parameters such as calories and carbohydrates, in the chromatographic analysis of the caffeine content to establish the best treatments those that were t8 (40% sunfo, 20% ñachag flowers and 40% guayusa leaves + hydrolyzed agave honey + citric acid 3 g), t6 (40% sunflower, 20% ñachag flowers and 40% leaves of guayusa + sucralose + citric acid 3g), t2 (35% of sunflower, 30% of flowers of ñachag and 35% of leaves of guayusa + Sucralose + Citric acid 3 g), considering a sensory analysis with 72 panelists from the UTC Club through an organoleptic evaluation of the energy drink determine the characteristics such as color, smell, taste, sweetness and acceptability to determine the best treatment which was t2 (35% sunfo, 30% ñachag flowers and 35% guayusa leaves + Sucralose + citric acid 3 g) taken to a process of reception of raw material, washing, sorting, disinfection, freezing, dehydration at 45° C for 4 hours, weighing dehydrated materials, grinding dehydrated raw materials, preparation of the concentration of samples where 2 g was made for 200ml of energizing drink influencing in the content of caffeine was also prepared in the two raw materials, infusion for 20 min at 65 ° C, mixed all the ingredients: sunfo extract, guayusa and ñachag, sweetener and acidulant, pasteurization at 75 ° C x 3 min, addition of cream of tartar as gasifier, packaging, sealing, labeling and storage. In addition, a physicochemical, nutritional, chromatographic and microbiological analysis of the energy drink was carried out in comparison with the NTE INEN 2411: 2008 of energy drinks, which through a report of results allows to deduce that it is within the range according to the NTE which guarantees the safety and food safety to the potential consumer of the Sunfpower energy drink.

In addition, a physicochemical, nutritional, chromatographic and microbiological analysis of the energy drink was carried out in comparison with the NTE INEN 2411: 2008 of energy drinks, which through a report of results allows to deduce that it is within the range according to the NTE which guarantees the safety and food safety to the potential consumer of the Sunfpower energy drink.El proyecto surgió con la finalidad de obtener una bebida energizante natural a base de los extractos de la planta de sunfo, flores de ñachag y hojas de guayusa, las hojas de guayusa se utilizaron para incrementar el contenido de cafeína; previamente en un análisis cromatográfico el sunfo y el ñachag no contenían cafeína por lo que para obtener una bebida energizante se requiere la presencia de dicho compuesto, la cual debía contener una cantidad al menos de 33,94 mg/L comparado con bebidas energizantes comerciales que oscila la cafeína entre 250 mg/L- 350 mg/L de acuerdo a la NTE INEN: 2008 Bebidas energéticas. Se obtuvo una bebida energizante media en cantidad de azúcar y baja en calorías para que puedan consumir deportistas. En la obtención de la bebida energizante se planteó 8 tratamientos con dos réplicas, planteando un arreglo de factores AxBxC bajo un DBCA en el cual el factor A con dos niveles (concentración de materias primas), en el factor B con dos niveles (tipo de endulzante) y en el factor C con dos niveles (concentración de acidulante), en donde se realizó un análisis fisicoquímico, análisis proximal y un análisis cromatográfico mediante estos análisis se evaluó las dos réplicas evaluando características como pH, grados Brix, acidez, parámetros nutricionales como las calorías y carbohidratos, en el análisis cromatográfico del contenido de cafeína para establecer los mejores tratamientos los que fueron t8 (40% de sunfo , 20% de flores de ñachag y 40% de hojas de guayusa + miel hidrolizada de agave + ácido cítrico 3 g), t6 (40% de sunfo, 20% de flores de ñachag y 40% de hojas de guayusa + sucralosa + ácido cítrico 3g), t2 (35% de sunfo, 30% de flores de ñachag y 35% de hojas de guayusa + sucralosa + ácido cítrico 3g), considerando un análisis sensorial con 72 panelistas del Club UTC a través de una evaluación organoléptica de la bebida energizante determinar características como el color, olor ,sabor, dulzor y aceptabilidad para determinar el mejor tratamiento el cual fue t2 (35 % de sunfo , 30 % de flores de ñachag y 35% de hojas de guayusa + sucralosa + ácido cítrico 3g) llevado a un proceso de recepción de materia prima, lavado, clasificado, desinfección, congelado, deshidratación a 45°C por 4 horas, pesado de materias deshidratadas, molienda materias primas deshidratadas, preparación de la concentración de muestras en donde se realizó 2g para 200 ml de bebida energizante influenciando en el contenido de cafeína igualmente se preparó en las dos materias primas, infusión por 20 min a 65°C, mezclado de todos los ingredientes: extracto de sunfo, guayusa y ñachag, endulzante y acidulante, pasteurización a 75°C x 3 min, adición de crémor tártaro como gasificante, envasado, sellado, etiquetado y almacenado.
