| Riassunto: | The dairy research laboratory from Agroindustry Career is essential, since, through them, the students perform learning practices, in order to complement theoretical and practical knowledge, therefore, the operation, maintenance manual, pedagogical application elaboration of (USB pocket pH-meter portable and pH) equipment are applied in the dairy and liquid product production, determining their pH and (ATC) automatic temperature compensation, the purpose this project is, what students perform practices, experiments and researches with efficient equipment, machinery and instruments. For the project execution was necessary the background, theoretical framework and research methodology, such as exploratory, descriptive, documentary research, the inductive method and observation, whose would solve the problems and fully, comply with the set aims. It was performed the different manuals, so that, the students can be informed and have access to true information about the proper functioning, maintenance and calibration, what can be made on the pH-meters, since they are essential to prolong the useful life and get reliable results, these instruments are usually used to perform a pH quality control and temperature into raw material (milk) or any liquid substance. For evidencing the equipment (pocket pH-meter and portable pH-meter with USB) use, It was made a demonstrative practice in the dairy research laboratory, through the mozzarella cheese production, which the proper functioning was demonstrated by pH reading and the temperature in the raw material (milk) reception and the whey for performing the spinning process, is important to mention, what the records were elaborated for the use and the different maintenance, what can be provided to pH-meters. |
