Gaia:The present work researched has as object the development of a manual operation, maintenance and renewal plan Gerber centrifuge, which it will be in the laboratory of Food Control and Analysis of Agroindustrial Engineering Career, in order to have a management reliable and adequate equipment and the development of appropriate learning is based on the combination of theory with the practice. In the process of preparing this job researched it used different types investigation of work researched, which are: documentary, descriptive and explanatory research field, then applied different investigative methods were applied: inductive and, deductive method finally techniques research among which are: interview, observation, scientific reading, leading to make this project a suitable form based on the practice of determining the percentage of fat in milk proper and operation of the centrifuge is demonstrated.
