Samenvatting: | The purpose of this research study was to obtain a maintenance and operation manual for the multiparameter pH meter Benchtop pH/Conductivity Meter and lactodensimeter, to strengthen the Dairy Research Laboratory, which has these types of equipment, but due to its prolonged use, a repowering is necessary for the elaboration of practices, as a didactic and demonstrative aid for future students of the Agroindustry Career. The manual has all the specifications for the use of both the multiparametric pH meter Benchtop pH / Conductivity Meter and the lactodensimeter, starting with the calibration of the equipment. First, find the form of calibration of the pH meter, which for the dairy area must be done in three points. This is followed by the user’s manual for the lactodensimeter, its calibration is not necessary, since it should only be taken into account the room temperature at which it is being worked. The maintenance manual that must be provided for each of these kinds of equipment is also described. The manual for the pH meter describes the preventive and corrective maintenance, which must be respected in the order before performing it since if it is not done the equipment can present different failures, which are described in the following manual as an error. Once the guidelines for calibration and use of the equipment were established, a demonstration practice was carried out and the result obtained was a 6.76 pH meter and 15 °C temperature, which compared to INEN 10:2012, is within the permitted range, the sample obtained from the milk at its maximum pasteurization temperature resulted in 6.51 in pH and 63°C in temperature, results that are also within the range allowed by the standard. In the case of the lactodensimeter, the density measurement was taken and as a result 1,048 in density was obtained, values which were purchased with the INEN 10:2012 standard, and it was observed that they are outside the allowed range, since the standard says that the maximum density of milk should be 1,031. |
