| Özet: | The inadequate use of lacto serum in the dairy industries of Ecuador represents a negative impact on the environment of different agro-industrial zones of the Sierra región. This byproduct obtained during the cheese manufacturing process, constitutes the most polluting substance that is generated in these industries, due to its physical-chemical characteristics and the presence in its composition of fats, sugars, proteins, minerals and others. The industrial process of the company APRODEMAG was characterized, one of the most productive in the Cotopaxi province and resulted in the daily discarding of 1,800 liters of lacto serum, which before this were not reused properly. To solve this problem, the simulation of a protein concentrates plant was proposed based on the reuse of this by-product. Substance in great demand in the pharmaceutical and food industry. The objective of the work is to perform the simulation of a protein concentrate plant using the sand software in which all the stages of the production process and the control parameters of the plant were considered, all the confidence intervals were calculated with the mean values based on the t-student test, with a confidence of 95% with 10 assay replications of the operation of the plant. It is proposed for the operation of the plant of protein concentrates, the technology of semipermeable membrane with serial stages of ultrafiltration to separate the proteins that have high molecular mass from minerals, lactose, water and other components. For the realization of the simulation, a mass balance was previously carried out for which the physical-chemical characterization of the whey was necessary, qualitative and quantitative analysis of the results was carried out. The conclusions derived from the work show that 1.28% and 1.15% of proteins are present in the lacto sera derived from the fresh and mature cheeses, have slight acidic properties both by-products, a density of 1.04 g / ml and 1.03 g / ml, the carbohydrates with values of 4.87% and 4.53% referring to the two types of whey and is in the range established for use in obtaining protein concentrates. The costs calculated for the construction of the plant were in total of 14614.5 dollars. It is recommended the modification of some parameters of the process of obtaining protein concentrate with time, volumes, concentration of sodium hypochlorite, to simulate it under those conditions and to verify which results allow to achieve the highest efficiency of the process. |
