| Summary: | In the present research, a microencapsulation based on oregano (Origanum Vulgare, ) was developed by spray drying; first the plant was dehydrated in a Universal 30 model oven for 24 hours at a temperature of 105 °C, for the extraction of bioactive compounds a mass/solvent ratio of 1.10 was used, at 60ºC for 24 hours and 90% m/m alcohol: 10, at 60°C for 24 hours and 90% m/m alcohol, by means of physicochemical analysis the extract was characterized obtaining results of pH 5.88, humidity 98.21%, iron reducing antioxidant capacity (µM Fe2+ /g sample) 1902.45, 8.1 °Brix and a density of 1.0526 g/ml. For microencapsulation, the encapsulating material used was a mixture of gum arabic and maltodextrin, the runs were proposed using the Desing Expert 8.0.6 program, establishing 9 runs, working with two factors; feed flow (600 ml/h; 500 ml/h; 700 ml/h) and air inlet temperature (130 ºC; 140 ºC; 150 ºC) and three response variables: humidity, yield and microencapsulation efficacy. By optimizing the experimental design models, the optimum conditions were determined as 500 ml/h feed flow rate and 150ºC inlet air temperature, obtaining response variables of 3.35% humidity, 93.44% yield and 94.89% efficiency, Subsequently, physicochemical analyses were carried out on the optimized powder with values of humidity 3.15%, apparent density 0.24g/ml, compacted density 0.48g/ml, hygroscopy 21.49%, solubility 92%, yield 95.15, antioxidant capacity 402(µM Fe 2+/g), total polyphenols 0.15 mg/g, angle of repose 31.58º. |
