Summary:Laurel, (Cordia alliodora) is a species belonging to the Boraginaceae family, it is a timber tree from the Neotropical forests. In our country he is a native and cultivated individual, he has only one fruiting time per year. The collection of fruits and seeds should be carried out in the months of November-April. It is considered one of the most valuable forest and timber species in the world. This explains the high rate of exploitation of its foliage, making it essential to spread through crops. The present study aimed to analyze the bromatological characteristics of Laurel seeds. The research was carried out in the evergreen Pie Montano forest (BsPn01) located between the parishes of El Tingo, La Esperanza, La Maná canton of the Cotopaxi province. The seed collection protocol was applied as established by Agrocalidad in the plant manual, then they were submitted to the LACONAL laboratory analysis where 7 parameters were evaluated and the following bromatological results of the Laurel seed were obtained: Ashes: 8, 31%, protein: 15.7%, humidity: 13.5%, fat 1.14%, crude fiber 0.903%, carbohydrates 60.2% and energy 1 323kJ / 100g. The results were compared with the CODEX STANDARD established by Agrocalidad, it was obtained that ash does not meet the parameters affecting the minerals, the humidity stabilizes the sample, the fats do not meet the comparison parameters and are not records for the extraction of oils , raw fibers comply with the provisions of the INEN 522 standard, carbohydrates are in a high percentage as energy. It is concluded according to bromatological analyzes that Laurel provides excellent nutritional components for the soil, carbon sequestration, its leaves and seeds are used by residents as natural medicines and food source for animals.
