| Резюме: | The present research seeks to highlight the: "Development of Procedures Manual and Stocktaking of Kitchen Areas and Laboratory Cocktails of the Career Engineering Ecotourism from Technical University of Cotopaxi" was performed by systematic processes, the first is developed the theoretical foundation through a bibliographic analysis, knowing each of the components which must have a procedure manual, a diagnosis in situ to make the stock taking of assets. For the second point was setting methodology dapting rules and techniques, which is been adjust to the manual obtaining of procedure and stock taking of the elements of laboratory services. Finally, it was did the third point applying a methodological framework with reference to the rules structure of ISO 9001, 14044, 27001, modified and Kardex method, are established procedures agree to the needs of the laboratory areas represented through flow grams and tables in Excel. This will facilitate the optimization of work efficiently and effectively by using the didactic guide and catalog, applied to the activities what played in each area of the establishment. For lather, it promotes and spread as a working tool for students, teachers and community. |
