Summary:The present research project was developed at Universidad Técnica de Cotopaxi the at Agave Research Laboratory of the Agroindustrial Engineering Career which had as objective the INDUSTRIALIZATION OF THE CAPULÍ (ESSENCE EYT) which is born from the need to generate new alternatives for the industrialization of the capulí (Prunus capulí), through the use of appropriate technologies, besides generating a better income for small and medium producers. The purpose of this research project was to extract the essential oil from the leaves of capulí (Prunus capulí) through the technique of extracting soxhlet with two types of leaf treatment (semi-dry leaves and macerated leaves) and a solvent mixture (water and ethanol), to take advantage of the properties of the leaves. To obtain the best treatment of the essential oil of the capulí leaf (Prunus capulí) was proposed, a factorial arrangement of A x B (2*3) ADEVA with 2 replicates, in factor A with the type of leaf treatment (semi-dry leaves and macerated leaves) and factor B with the solvent (ethanol 25% - water 75%, ethanol 50% - water 50%, ethanol 75% - water 25%) and a physical-chemical analysis was obtained the two best treatments t5 (leaves macerated for 2 months + ethanol 50% - water 50%) and t6 (leaves macerated for 2 months + ethanol 75% - water 25%), subsequently a microbiological analysis was carried out, resulting in both t5 and t6 counts of molds (ufc / g) 2.0 x 10 and yeast count (ufc / g) <10. Analyzing the product cost of the best t6 treatment, the retail price is $ 2.10 for each container of 15 ml of essential oil, with 1.4% yield, resulting in a competitive product at the market, which can be used in the food industry, especially in the preparation of alcoholic beverages because its essence is more concentrated in essential oils.
