| Sumari: | The Guarumo (Cecropia Sp) is a tree native to South America, has a unique annual fruiting season, which is a very important constraint to a big demand that exists in the market. This researching was carried out in the sector of Esperanza, Pujili Canton, and Cotopaxi Province in order to determine an appropriate methodology for bromatological analysis in the seeds in order to determine the nutritional and environmental potential. For this reason, the protocol of collection of seeds was established; accompanied by different treatments of disinfection; to immediately submit them to the bromatological analysis in laboratory where 7 parameters were evaluated: ashes this presented a value of 1.58%, the protein presented a value of 2.35%, the gravimetric humidity is of 80.6%, the content of fat is of 0.108%, the percentage of crude fiber is of 0.0705 presents 15.3% of carbohydrates and of 72 Kcal/100 g, since it is an orthodox seed, it can be stored for several periods of time without losing its germination power. Then it was proceeded to compare the maximum permissible limits and to identify the magnitude of the contributions that it provides, with the NORM of CODEX established by Agrocalidad for bromatological analysis in seeds and leaves; by means of a statistical analysis in Excel. It is concluded that the species in function of the bromatological concentrations contributes with excellent nutritional components. But it has a number of environmental uses such as soil improvement, helps to capture carbon, its leaves and seeds are used by local people as natural medicines to combat overweight, high blood pressure, and diabetes, among others. It is also used as the basis of the food source in animals, in addition to being a pioneer tree in reforestation processes for its easy propagation and growth time. |
