| Resumo: | The safety of animal products is essential to ensure the consumer´s health, which is why veterinary inspection in all slaughter centers is necessary to achieve this goal, so this research work was carried out at the Saquisili Technological Slaughterhouse. Its main objective was to determine the causes of confiscating slaughtered cattle through macroscopic inspection to safeguard public health by reviewing veterinary records, sanitary control, and statistical analysis during July 2022. Over 800 cattle were sampled, and 219 animals were identified with anatomopathological alterations during the slaughter, morphological changes were identified mainly in the liver due to the presence of pathologies such as Dystomatosis with 29%, followed by liver abscesses with 22%, Liver Cirrhosis with 13%, Fibrosis with 4%, Ecchymosis with 3%, Fatty Liver with 2% and Mastitis with 15% of alterations at mammary gland level, which were seized to safeguard the food chain. According to the origin of the cattle, it was determined that Distomatosis has a higher incidence of organ seizures because it is considered a zoonotic disease with 55% of cattle from Latacunga, followed by liver abscesses with 20% of cattle from Saquisili, Mastitis with 12% of cattle from Salcedo and Cirrhosis of the liver with 9% of cattle from Sigchos. The social cost-benefit of the seized products was established, with the liver being the tastiest organ for the consumer due to its high nutritional value and, at the same time, the most susceptible to seizure with 71.31%, which generated estimated economic losses of 3480 US dollars. In summary, sanitary inspection plays a vital role in epidemiological surveillance, allowing the identification and control of diseases in food animals and the establishment of reports on the animal health situation in the country. |
