Its main objective was to determine the causes of confiscating slaughtered cattle through macroscopic inspection to safeguard public health by reviewing veterinary records, sanitary control, and statistical analysis during July 2022. Over 800 cattle were sampled, and 219 animals were identified with anatomopathological alterations during the slaughter, morphological changes were identified mainly in the liver due to the presence of pathologies such as Dystomatosis with 29%, followed by liver abscesses with 22%, Liver Cirrhosis with 13%, Fibrosis with 4%, Ecchymosis with 3%, Fatty Liver with 2% and Mastitis with 15% of alterations at mammary gland level, which were seized to safeguard the food chain. According to the origin of the cattle, it was determined that Distomatosis has a higher incidence of organ seizures because it is considered a zoonotic disease with 55% of cattle from Latacunga, followed by liver abscesses with 20% of cattle from Saquisili, Mastitis with 12% of cattle from Salcedo and Cirrhosis of the liver with 9% of cattle from Sigchos. The social cost-benefit of the seized products was established, with the liver being the tastiest organ for the consumer due to its high nutritional value and, at the same time, the most susceptible to seizure with 71.31%, which generated estimated economic losses of 3480 US dollars. In summary, sanitary inspection plays a vital role in epidemiological surveillance, allowing the identification and control of diseases in food animals and the establishment of reports on the animal health situation in the country.

El presente trabajo de investigación se realizó en el Camal Tecnológico Saquisili. Tuvo como objetivo principal determinar las causas de decomiso en bovinos faenados, mediante inspección macroscópica para salvaguardar la salud pública a través de la revisión de registros veterinarios, control sanitario y análisis estadístico durante el periodo de Julio 2022. De un total de 800 bovinos muestreados, se identificaron 219 animales con alteraciones anatomopatológicas durante el proceso de faenamiento, se identificó cambios morfológicos principalmente en el Hígado debido a la presencia de patologías como Distomatosis con 29% seguida de Abscesos Hepáticos con 22%, Cirrosis Hepática con 13%, Fibrosis con 4%, Equimosis 3%, Hígado graso 2% y Mastitis con un 15% de alteraciones a nivel de la glándula mamaria, los cuales fueron decomisados para salvaguardar la cadena alimentaria. De acuerdo a la procedencia de los semovientes se determinó que Distomatosis tiene una mayor incidencia en el decomiso de órganos debido a que es considerada una enfermedad zoonótica con un 55% de bovinos procedentes de Latacunga, seguida de abscesos hepáticos con 20% de bovinos procedentes de Saquisili, por otra parte Mastitis con 12% de bovinos procedentes de Salcedo y Cirrosis Hepática con un 9% de bovinos procedentes de Sigchos. Se estableció el costo beneficio social de los productos decomisados siendo el Hígado el órgano más apetecible por el consumidor debido a su gran aporte nutricional y a su vez el más susceptible al decomiso con el 71,31% lo cual genera pérdidas económicas estimadas de 3480 dólares americanos.
