In third place, the operative viability was analyzed, which served to measure the time that the company will take in each process for the goods elaboration. As a conclusion it can be affirmed that there is a potential market for the sale of the product; that there is financial viability to create the future company; and that the operations of goods elaboration are feasible in the proposed times. That is why, can be stated with propriety that the needs of a potential yoghurt consuming clientele can be met, with an added value "stevia" natural sweetener. |

En primer lugar, se realizó el estudio de mercado que permitió la evaluación de la potencial introducción del producto en la ciudad de Latacunga. En segundo lugar, se analizó la viabilidad financiera de la futura empresa. En tercer lugar, se analizó la viabilidad operativa, la cual sirvió para la medición de los tiempos que la empresa va a tomar en cada proceso para la elaboración del producto. Se concluye que hay un potencial mercado para la venta del producto; que existe viabilidad financiera para formar la futura empresa; y que las operaciones de elaboración del producto son factibles en los tiempos propuestos.
