الملخص: | The main objective of this project is to carry out a set of pedagogical applications with the use of the milk skimmer to strengthen the experimental learning of the students of the Agroindustry Career of the Technical University of Cotopaxi, through the documentary modality, which was used to investigate all the technical knowledge about agroindustrial equipment, as well as for the realization of experimental practices and the elaboration of Milk skimmer. This one was complemented by applied and descriptive research to detail all the steps for the correct use, operation and cleaning of the machine, where if the operator takes into account everything detailed in the manual, the machine will have a longer service life to get the most out of experimental practices, in the same way it was used to specify all the processes carried out in the , operation and the correct way to perform the cleaning after the defatting process, where products appetizing to the consumer were obtained. Regarding the chocolate milk, a soluble solid content of 24.6 °Brix and 6.95 pH was obtained. They were compared bibliographically and had optimal values of 18 °Brix and 6.8 pH. In the case of yogurt, it was possible to obtain products with excellent characteristics, with a pH of 4.1; soluble solids 13.7 °Brix for strawberry and a pH of 4; 14.4 °Brix for orange. It confirmed that if they are within what is established by the bibliographic data, which pH values must be in a range of 4 to 4.5 and the soluble solids, it fully complying with all the objectives set for this integrating project, which will be of great importance because It will help in the complementation of theoretical-practical learning. |
