Περίληψη:Tourism involves traveling outside the usual environment, whether for business, leisure, or visits to natural and cultural environments, among which the importance of gastronomy stands out as part of the tourist experience and in economic development. The gastronomic diversity of Ecuador is highlighted, with a particular focus on the Latacunga canton. The research aims to evaluate the potential of gastronomic tourism in this area through the SIGAP methodology and the Gastronomic Maps of Ecuador. The research was qualitative, non-experimental, with a cross-sectional design, and an exploratory-descriptive method was used to analyze the current situation of the study area and the variables related to gastronomic tourism potential. Observation techniques and surveys were used, targeting authorities, gastronomic service providers, and tourists. The population was segmented into three groups, and an intentional sample was chosen for authorities and service providers, with a probabilistic sample of 363 tourists. The survey revealed that the majority of customers visiting food establishments are tourists from other provinces, and the establishment's tradition is the most influential factor in food consumption habits. Tourists visiting the Latacunga canton come from the Ambato canton, are mainly between 18 and 35 years old, mostly women, and their motivation is gastronomic, cultural, and adventure tourism. It was also identified that the Latacunga canton does have the potential to develop gastronomic tourism.
