| Zusammenfassung: | The current project was made, through the got information collection and structuring, both from primary and secondary sources. This project is emphasized the technical information related to the pasta laminating machine, which is complemented by a detailed operation and maintenance manual, together with its pedagogical applications. The main purpose is to reinforce the laboratory capacities, belonging to the Agricultural Sciences and Natural Resources Faculty (CAREN) from Cotopaxi Technical University. This integrative project is based on manuals two essential types, mainly: the operating manual, which focuses on the indications for safe and proper use, in order to ensure effective use and enrich our understanding. On the other hand, the maintenance manual focuses on the guidelines, patterns and essential procedures for the care both the machinery and the staff, what operate it, with the aim by anticipating and solving possible future problems. Finally, it was made a pedagogical application, through the demonstrative practices’ developments, which were developed three products types: spinach-based fettuccine, spinach sheets for lasagna and pasta sheets for ravioli. It was followed the INEN 1375 standard, what offers advantages in efficiency and precision terms in the pasta laminate preparation and shaping. |
