Resumo:The Operations Kitchenware Manual for Laboratory of Services offers proposals to potentiate the time, physical and human resources through operations and procedures relating to the activities and practices that will perform daily. The purpose of the manual is the correct implementation of the theory into practice for both the UTC student and for external people, because quality is the aspect that should be taken care. The daily activities shall be supervised in order to improve the performance of all entities included in this macro-project. The overall organization and teaching the user, since he is who will demonstrate knowledge received in accordance with their expectations. Another objective being seeking with this operating manual is to establish standards that allow students to perform tasks based on culinary techniques that will enhance the skills of each individual and thus can achieve operational efficiency and effectiveness to customers.
