Summary:The microenterprise “ASADERO EL LEÑADOR”, is located in the Latacunga city, La Matriz Parish, Amazonas Avenue and Pastaza Street, this is a family microenterprise and it is targeted at the meal area, dedicated to food preparation and it has a business track record for more than 25 years in the local market. Currently, due to the great demand of its customers and the companies competitiveness growth with a similar offer, it has been necessary to venture into the continuous improvement of its processes and the quality control that is maintained in the microenterprise, for this reason, this project focused on the design of a quality management system that allows the generation of standards and indicators, as well as their evaluation, in order to optimize resources, supplies, minimize waste and, above all, improve the economic profitability of the business, becoming a powerful compliance audit tool. On the other hand, through this research it was also possible to establish the basis of a hierarchical administration based on a structural and functional organization chart, defining jobs, delegation of functions and responsibilities, in order to ensure compliance and quality control in inputs, processes and products that are sold to the client in the microenterprise, leaving aside the empirical administration that had been carried out, thus seeking to remain in the local market for many more years and achieving total satisfaction of the clients needs, through short, medium and long-term goals, with a view to achieving a quality certification issued by a competent regulatory authority in the sector in which the microenterprise is located.
