| Tóm tắt: | The objective of the work was the implementation of Good Manufacturing Practices (GMP), based on Resolution ARCSA-DE-067-2015-GGG, which helps reduce the risks of contamination of products and improve the image of the company. . In this sense, a BPM documentary system was designed in the company Miele & Sweet, located in the Mejía canton. The initial situation of the company was evaluated using the GMP checklist of the Sanitary Regulation, Control and Surveillance Agency (ARCSA), the results obtained were tabulated and analyzed, determining the percentage of items of compliance and non-compliance with the requirements that they frame the BPM, as they are of the facilities; of equipment and utensils; manufacturing hygienic requirements obligations of personnel; of raw materials and supplies; production operations; packaging, labeling and packaging; storage, distribution, transportation and marketing; quality assurance and control and reference documents. Once the missing requirements were known, a BPM Manual was developed, the Standardized Operating Procedure (SOP) was elaborated and the necessary adjustments and implementations were made in the plant. A second evaluation was carried out, in which it was determined that the percentage of BPM implementation increased significantly. In the same way, the Zonal Coordination 2 of the ARCSA, carried out a verification of the establishment, concluding that it meets the requirements established in Resolution ARCSA-DE-067-2015-GGG Sanitary Technical Regulations for Processed Foods, in its chapter II of Good Manufacturing Practices. |
