| Summary: | This research is focused on the design of a manual for the operation, maintenance and pedagogical application of an ice-making machine belonging to the meat research laboratory of the Agro-industry course at the Technical University of Cotopaxi. In the current work, the research method was used for the production of the manuals as a practical and descriptive type of research, in addition to the theoretical basis already obtained. The methodology used in this work during the practice helped us to determine the technical parameters of the equipment and its operating procedure, each manual contains a detailed description of the operation, its components, generalities, services required for proper operation, type of maintenance which details the routine, preventive and corrective maintenance that guide the actions for the different processes of adjustment, repair and replacement of components for proper operation during the performance and personal safety measures. The ice maker is an equipment capable of transforming water in liquid state to solid state, since the ice was used in the elaboration of chicken sausage and frankfurter and intervenes in the homogenization process when it is introduced in the cutter together with the additives and the meat, fulfilling the only objective of maintaining the adequate temperature and also that the emulsion has the correct texture and consistency. The aim of these manuals is that the Faculty of Agricultural Sciences and Natural Resources and specifically the career of Agroindustry has a guide and information of the machines, equipment and instruments so that at the time of use in the practices do not present problems and in the case of having them a quick and safe solution is given, thus avoiding damage or problems in the university community and can continue to run normally pedagogical practices, since its sole purpose is that students along with teachers put into practice what they have learned. |
