| Streszczenie: | This research, it was made the current management system diagnosis from lupine process (Lupinus mutabilis Sweet), from variety INIAP 450 Andino and Nativo for its conservation in the processing plant from Chugchilan parish, which it was made a verification matrix with the following points of study infrastructure, materials and processes with their respective photographic evidence, physical-chemical and microbiological laboratory analysis of lupine based on the NTE INEN, ISO, BPM, TULMAS standards. The methodology was made in four phases: the first phase was the study place identification and the information collection and reliable bibliographic sources from enterprise; second phase, it was made the physical-chemical and microbiological laboratory analyzes of the bitter and debittered lupine; the third phase, through the infrastructure, materials and processes verification matrix will help to determine the processes most critical points to suggest improvements; fourth phase, once, it was found the critical points, through the verification matrix, it was elaborated a manual. With aforementioned all, it was identified 5 critical points, such as: raw material reception, classification, rinsing, debittering and storage, while the physical-chemical analysis results established, what the moisture into the bitter lupine was 15.18% and out 10.40% that from established in the NTE INEN 2389 regulation from 11-12%. In the total coliform count parameter into debittered lupine of 3.7 x 10² CFU/g with an uncertainty of ± 3.84% and 1.4 x 10³ CFU/g with an uncertainty of ± 2.67% established in the NTE INEN-ISO 4832: 2016 standard. In the two repetitions from river water microbiological analyzes from count parameter of e. coli (fecal coliforms) is from <1 CFU/100mL with a ±0.33 Log and 2.6 x 10⁴ ² CFU/g uncertainty with the same uncertainty value from first outside, from what is established in the Standard Methods 9222B analysis methods/Membrane filtration. Finally, it is concluded from the 16 points, which were qualified in the matrix, what there is a 37.5% compliance, so it is necessary to immediately improve the process. For this reason, it was made a procedures manual, which will serve as a tool for continuous improvement of enterprise. |
