| Tóm tắt: | In the present research work it is proposed to generate a proposal to improve processes for the increase of productivity in the “Pizzería Di Angelo” aplying the tolos of Process Engineering, based on the resources available tio the company, process efficiency and worker productivity today. Because the company, you need to know the procedures that allow to solve the problems related to the production processes. The application of engineering process is an activity that involves the technique of establishing efficient methods to perform a specific task, following a pre-established sequence. For the information survey, the 5 "M" method was used, where the factors involved in the production process were analyzed. In this analysis, the study of current work times was taken as a priority, carried out by regression time to zero where each process were established, obtaining a total of 16:14:44 on Sunday-Thursday and 29:13:49 on Friday-Saturdays. Identifying the use of more time in the processes of: kneading, preparation of: tomato paste, pineapples, chicken breasts, complementary supplies and milled meat, because the worker performs his activities empirically. For the reduction of times and movements, a training proposal is planned to the personnel of the production area, about work methods, productivity, efficiency, responsibility in the work, organization of the job, order and cleaning of machinery, that is intended to obtain a performance of 95% of efficiency of the workers, also combined activities which allowed to reduce the unproductive times that did not add any value to the processes, obtaining a standard time of 11:18:39 on Sundays- Thursday and 21:13:43 for Friday-Saturday, and was able to increase by 46.42% the productivity of labor in the process for the days of lower demand and 39.13% for the days of Friday and Saturday , this is because the times are standardized and in effect it is reduced: from 3 to 2 workers in the morning time, 14 extra hours per week. It was also recovered, $ 123.40 per week in the investment of raw materials and supplies. If the company implements the proposal, it must establish an optimized time control to evaluate the efficiency of the worker and maintain constant training for personnel in the production area that allows them to better use the resources. |
