總結:This research project was focused on determining the Phytochemical Profile and the rheological properties of mucilaginous plants of Yausabara (Pavonia sepium) and Cucarda (Hibiscus rosa-sinensis) of the Andean highlands. Through this work the chemical substances present in the plants of Andean origin were identified, through phytochemical screening, where it was possible to demonstrate the presence of metabolites in both plants. Through a bibliographic collection metabolites of great agroindustrial interest were identified as the catechins, resins, reducing sugars, saponins, flavonoids and mucilages, where their presence was very evident. At the time of phytochemical screening, there were two variations. The first one where the presence of resins it could only be identified in the Yausabara sample so the extract etanolic there was the possible presence of a dark precipitate (resins) at the bottom of the tube of the ethanolic extract is evidenced Unlike the Cucarda test where it was not possible to show this precipitate. The second variation was saponins in the ethanolic extract where the presence of saponins is evidenced because the foam in the test tube lasts for more than 5 minutes and has approximately 1 cm thick, which in the Yausabara sample did not present any of these two characteristics.
