Summary: | When carrying out a rheological study of the yogurt, probiotic drink, nectar and jams obtained in the production plant belonging to the Agroindustry career of the Technical University of Cotopaxi, the scarce information about the modernization of machines, pipes and pumping was considered problematic. of these fluids, so a loss of productivity was identified in this production plant. The research project in the first instance is theoretically justified by presenting theoretical and bibliographic information from updated and reliable sources such as scientific articles and similar research theses that served as background. While field research made it easier to take samples of the fluids and apply studies through experimental design. As part of the methodology that facilitates the rheological study, the following models were used: Power law model (Ostwald-de Waele), Bingham model, Newton's law equation of fluid viscosity, Herschel–Bulkley model, as well as the use of formulas such as apparent viscosity. These models made it easier to graph the fluids and determine the appropriate diameters of the pipes. As the tool used, an NDJ8S viscometer and a thermocouple temperature measurement were acquired, and mathematical software was also used to analyze the data. Currently, the use of technological tools and equipment facilitates research. In the methodology, each of the Newtonian and non-Newtonian products was analyzed using the viscometer, and graphs were obtained that will allow us to analyze such as apparent viscosity, velocity gradient. , fluid rheogram intervene in the costs of the pipe and its diameters. |
