Résumé:The purpose of this research study was to develop sustainability indicators for food production and consumption at Salache Experimental and Academic Center of the Technical University of Cotopaxi. The lack of institutional indicators prevents the production processes assessment about the environment. In order to know the current state of food production and consumption, a field visit was made and it was observed that there are no good agroecological practices that help the conservation of biodiversity and sustainable production. Indicators are of great importance, because they allow to evaluate the institution progress towards a sustainable development. Therefore, sustainability indicators were developed and selected based on the bibliographic, theoretical and scientific documentation, further, they were related with the Sustainable Development Aims (SDAs), which it was chosen the aim 2 that indicates: “To put end hunger, achieve food security, improve nutrition, promote sustainable agriculture”, and aim 1 y 2 that deal about the production and responsible consumption. So, the techniques implementation such as (composting, lacto-ferments, animal organic material, plant organic material) for having a friendly production with the environment and the educational events organization about productive and sustainable agriculture with the university community. The institutional sustainability indicators will quantify the responsibility degree and environmental sustainability for the production and consumption of food. In addition, through the indicators were made an environmental development plan in order to propose strategies that contribute with the production and responsible food consumption, the same that are healthy and nutritious for the society welfare. It should be noted that the implementation of agroecological trainings, programs and workshops will serve to update the knowledge of the university community.
