Sumari:Good manufacturing practices (GMP) have allowed an improvement in the processing and marketing of chicken meat, mainly in food safety and safety, so the proposal to apply them is of the utmost importance in the meat industry that aims to provide a safe and quality product. Under this argument, the application of BPM in artisanal enterprises is being controlled by the competent authority, so its application in the traditional management of chickens in this case that are fed organically is necessary. For all these reasons, the objective of this research was to implement good manufacturing practices according to the ARCSA-DE-067-2015-GGG Regulation in the Pollos Clio microenterprise in the La Maná canton. In the first stage of the project, an initial diagnosis was made in the company using a survey of employees and merchants as a starting point, in addition to a checklist based on the ARCSA-DE-067-2015-GGG regulation, obtaining 58% of items that do not comply and 35% that comply. In the second stage, activities were proposed for the correction of breaches at the level of personnel obligations, handling of raw materials and supplies, transportation and marketing and reference documents, for the other activities related to facilities and equipment, operation, and insurance. of quality, a financial study was proposed to achieve the application of BPM completely in the microenterprise. After the application, the percentages of compliance increased to 51%, while non-compliance was reduced to 42%. For the validation of the proposal, it was carried out with internationally renowned experts, obtaining an Aiken coefficient greater than 0.8, which showed that the economic proposal is viable and validated in all its stages. Finally, consumers also demonstrated their acceptability of the product through the application of a survey.
