Tóm tắt:The curret research has as aim an edible coating based on nopal mucilage with hemp seed oil (cannabis sativa ssp), in order to prolong the chicken fillets preservation time at a temperature of 4 °C., which it was used a completely randomized design (DCA) into a (2 * 2) factorial arrangement and a control treatment, what it was assessed the physicochemical parameters into time five periods: zero, two, four, six and eight days; by starting from a 5,27 to 5,80 pH initial, 0,04% to 0,037% titratable acidity lactic acid and a 41,33% to 36,67% water retention capacity (CRA), with the purpose of assessing the tratament stability on the measurement days, being the best tratament in presented the formulation (75% cactus mucilage + 20% sorbitol + 5% pectin + 0.1% cactus seed oil hemp) . Once, it was identified the best treatment, it was made microbiological analyzes to the storage eigth days, getting the following results: Aerobic Bacteria Count 1.8 x 104 CFU/g; Total Coliform Count 1.3 x 104 /g; CFU Escherichia Coli 4.0 x 102 CFU/g, and Absence of Salmonella ssp, values, that are within the set ranges in the NTE INEN 2346 regulation, farm animals’ meat and edible offal, presenting the sanitary quality and suitability for the human consumption.
