| Summary: | The research project aims to observe the market and identification, operational management, strategies or resources indicated by the entrepreneur capable of leading, creating and proposing new options related to gastronomy, for which they seek to satisfy the customer. Under the modality of verifying the viability of the barbecue businesses, which provides relevant information on the potential market existing in the study area, direct competition and the guidelines to establish the search for operating systems with service to diners, since it is based on a deep study of the needs, requirements that national and foreign tourists have to satisfy with quality the basic need such as food, feasibility, technology; then it is sought, to investigate the preferences of the consumer, the commercial activity and to determine the strategies of the businesses in what affect the attraction of diners. In a panorama where the culinary, local products and traditions are recognized as intangible cultural heritage, a strong demand has been generated for professionals in the barbecue branch with the capacity for gastronomic transformation and innovation.
