| Summary: | Research aimed to evaluate the microbiological quality of the beef sold in the Buena Fé city and know their degree of contamination was raised. For the control of microbiological compliance INEN Standard 1338-2012 was applied; underwent a census of operators and meat terseness centers using a questionnaire on health and hygiene topics. The results showed the absence of pathogens related to product safety, however there was a high burden of aerobic mesophilic above rule also was found as pollutant load to bacterial species of the genera Flavobacterium and Bifidobacterium which allows to conclude that must correct the unsanitary conditions. The null hypothesis is rejected "The microbiological quality of beef expended in Canton Good Faith, are within the standard NTE INEN-1338-3" (Requirements for Meat and Meat products in general). It is recommended to provide training to the operating staff of the places of sale on Good Manufacturing Practices; study the impact of transport and external factors on the microbiological quality of the beef sold in the Canton Good Faith.
