| Samenvatting: | This investigation was carried out in the canton of Quevedo, Los Ríos province and the Pangua canton, Cotopaxi province. It is singled out for having developed in two stages: a) The extraction of cocoa shell mucilage (Theobroma cacao L) from clone CCN-51, and b) the evaluation of the effect of clarification of sugarcane juices (Saccharum officinarum) of the Ragnar variety using 3 viscosities and 3 concentrations. To determine the clarification process in each treatment group it was necessary to work with a pattern that had no mucilage addition. The extraction of the cocoa shell mucilage was carried out following the guidelines specified in the study “Effect of viscosity of the national cocoa shell mucilage (Theobroma cacao L) in the clarification of sugarcane juice (saccharum officinarum) of the variety Ragnar ”carried out by Ángel Fernández Escobar, establishing the following formula: Water 70.59%, 60 ° A 1.4% Brandy, CCN-51 28% cocoa shell, 0.01% sodium metabisulfite. The experimental clarification response was tested for normality according to the Shapiro-Wilk statistic; endorsing that the data is parametric, continuing with the tukey significance test (P <0.05). From the analysis of variance it was determined that the a2b1 treatment that corresponds to a viscosity of 30 cp and a concentration of 1.50% of cocoa shell mucilage (Theobroma cacao L.) of clone CCN-51 gives the best percentage of clarification reaching 23.07% in relation to the standard sample.
