| Sažetak: | This research project was carried out in the company called Casacao ¨La Nueva casa de cacao¨, which is located in the Province of Los Ríos, Quevedo km 2 1/2 road to Valencia, with the objective of ¨ PROPOSE A PRODUCTIVE PROCESS FOR THE OBTAINING OF SUGAR FROM THE COCOA MUCILAGO THAT IS WASTED IN THE CASACAO COMPANY THE NEW COCOA HOUSE OF THE QUEVEDO CITY ¨, through field visits, interviews were carried out with the general manager of the company with the end of obtaining historical data on the production of the mucilage or cocoa pulp, knowing that it began to work with the purchase of cocoa in slime since 2015 to work with the pulping machine, it can be determined that the entry of cocoa into slime has been increasing progressively until the year 2020 in which it was reduced due to the pandemic caused by the covid-19, also to acquire information regarding the productive process that the company has, and in this way to know about its operation in more detail. The bibliographic information was of great help for the fulfillment of this investigation since from these data it has been concluded that the cocoa mucilage is a product very rich in sugars for the manufacture of honey and the extraction of sugar. The manufacture of sugar was carried out based on the data obtained by the different experimental methods, showing that there is an opportunity to process the cocoa mucilage for the manufacture of sugar and thus verify the existence of a process for its production, it is necessary intertwine the empirical form towards the industrial to make the best use of this resource, which has been considered a waste that is disposed of through the sewer system or in vacant lots. It was also possible to generate new opportunities in the productive sector at the event. to carry out the investigation and thus perform in the industrial sector.
