Zusammenfassung:This research project is focused on the optimization of the purchasing process, selection of suppliers and negotiation of the purchase that allows us to reduce costs and at the same time improve productivity in the Restaurant Adonay SA The purpose is to offer a solution to the problems encountered through the determination of the demand, after carrying out an ABC analysis in accordance with the importance of each product in the total sales of the Restaurant the model of economic order quantity (EOQ) was applied in order to reduce costs and finally I make an evaluation to the suppliers in order to select those who meet the detailed criteria.
