Sumario:Analyzes of contamination of aflatoxins in food today are of great importance because these mycotoxins are potentially carcinogenic to humans and animals. The present research had the objective of quantitatively evaluating aflatoxins in samples of foods for children consumption in the city of Ventanas. The Elisa method (enzyme-linked immunosorbent assay) was used to determine the aflatoxin content. Through a survey, food was selected and classified into different groups such as cookies, cereals, flour for snacks and snacks. The analyzes were carried out in the bromatology laboratory owned by Quevedo State Technical University (UTEQ), located in The 7 ½ km of the Quevedo - El Empalme road. A Student's T was applied for two samples assuming unequal variances that was used to compare the groups of foods with the presence of aflatoxins, at 1% and 5% of significance. In the analyzed samples, 39% had values of 5.95 ppb and 30% of the samples had 4.48 ppb. Following this, 23% of the samples had a contamination of 3.54 ppb whereas 8% The samples contain 1.27 ppb. Although the presence of aflatoxins existed the level of these comply with the permissible limits of national and international regulations.
