| Riassunto: | The liver in fish performs both hepatic and pancreatic functions; It is the metabolizing organ par excellence of all the substances that reach it through the blood, which is why it is used as a histological reference for cell analysis depending on diets or environments. The study aimed to determine the hepatic histological response in juvenile red tilapia (Oreochromis mossambicus x O. niloticus) fed with six levels of inclusion of β-glucans in the diet, six levels of inclusion of β-glucans were applied as treatments which were 0, 1, 2, 3, 4, 5 and 6% and three repetitions per treatment were established which had a density of 20 juveniles / tank. For this, 9 tanks operated in 90 L of water were used, evaluating a total of 180 fish. The culture period lasted 55 days, then the livers were dissected and processed by histology. In the variable hepatosomatic index no significant differences were reported (p<0.05), the inclusion of β glucans did not affect the energy reserves of the liver. With respect to the diameters of the hepatocytes the variables hepatocyte area μm2, diameter of hepatocyte μm and volume of hepatocytes μm3 if statistical differences were recorded (P≤0.05). The highest averages were recorded in T6 with (5% of β-glucans in the diet) with values of 95.56 μm2, 10.59 μm and volume 724.82 μm3 respectively. When evaluating the variables cytoplasm area, cytoplasm volume, whether there was a statistical difference. I highlight T6 (5% of β-glucans in the diet). The variable ratio of hepatocytes cytoplasm area / nuclear area μm2, it was determined that if there was a statistical difference (p<0.05) the highest values were recorded in the treatments in the T3 (2% of β-glucans in the diet). While in the variables related to sinusoids, such as μm2 area and μm sinusoid diameter, the highest average were reported in T6 (5% of β-glucans) and T5( 4% of β-glucans) with values in area of 56.75 and 49.65 μm2 and in diameter with values of 7.99 and 7.90 μm, it is concluded that addiction of β-glucans improved liver hispathology.
