Summary:This business plan is performed in order to determine the viability and profitability of creation of a restaurant's vegetarian meals in Quevedo, province of Los Ríos canton, in order to meet the needs of the hospitality industry of the sector. The business idea arises because currently only canton there are 3 restaurants that offer vegetarian food, the same people who do not fully meet demand expectations, since in the area many people among inhabitants and tourists looking for this kind of food in order to eat healthily. To determine the viability and profitability of the business plan, we implemented a market study aimed at the supply and demand for vegetarian food in the area. Demand 383 people of Quevedo canton and the range comprise 3 owners of vegetarian restaurants in the area, samples that were obtained from a population of 195.524 inhabitants, according to the projection of the National Institute of statistics and censuses (INEC) in 2015. Market study revealed the tastes, preferences and acceptance of target audience (business owners and consumers of vegetarian food) sector, concerning the creation of a vegetarian restaurant in Quevedo canton; it also gave guidelines to establish the technical, economic and financial study. The results of the study show that the business plan is viable and profitable, since there is an acceptable demand and projected income for the well-being and development of the new business. Herein was raised a proposal that can be used as an alternative to the corporate image of the new premises of vegetarian food, besides several advertising strategies are designed to position the new business in the local market.
