Résumé:In this research project, the procedures used for the design and simulation of a corrugated tube tubular pasteurizer are detailed, with the purpose of offering a reliable design to the orange producers of the country, since thanks to this type of equipment they can efficiently process their raw material into quality orange juice. The design of the tubular pasteurization system was carried out according to the TEMA standard, and has been divided into four sections: energy balance, thermal design, hydraulic design and mechanical design. In the energy balance, the operating conditions of the heat exchangers were determined. In the thermal design, the shell diameter, tube diameter and tube length were defined. In the hydraulic design, the pressure drop in each of the heat exchangers was calculated. Finally, in the mechanical design, the thickness and material of each part of the heat exchanger was determined. Using Solidworks software, computational simulations of the heat exchangers were modeled and carried out, simulating the behavior of the fluids under operating conditions of the tubular pasteurizer, where the fluids involved are orange juice and the service fluids are hot water at 99 °C and cold water at 1 °C. The results obtained from the software analysis are compared with the design data of the project to verify its veracity, demonstrating that the values of the parameters have been correct. A general assembly of the system was carried out and the main design drawings were prepared.
