| الملخص: | Animal welfare in the municipal field is essential for several very important reasons. First of all, it guarantees humane and ethical conditions during slaughter, which is fundamental for respect for both the animals and the community at large. In addition, an approach focused on animal welfare contributes significantly to the production of quality meat by reducing stress and anxiety in animals, which has a direct impact on the texture and taste of the resulting meat. In addition, the emphasis on animal welfare promotes public health by ensuring compliance with health and ethical regulations, which in turn helps decrease the risk of foodbome illness. Therefore, the main purpose of this research is to thoroughly evaluate the animal welfare and meat quality of cattle in the Municipal Farm of the El Empalme canton during the year 2023. This will involve a detailed analysis of the techniques used in the slaughtering process in the slaughtering plant, which have a direct impact on the final quality of the meat product. Particular attention was paid to procedures related to proper transport prior to slaughter, with the aim of preventing weight loss and injury to animals. In addition, the stunning method used to sensitize cattle was examined, as well as the entire post-mortem process, from lifting, bleeding and slaughtering, to the cutting of legs and head, skinning, evisceration, fissuring and the inspection process by the veterinarian on duty. This comprehensive approach will provide a comprehensive overview of the impact of slaughter practices on animal welfare and meat quality in the municipal field. |
