Sumari:This research was conducted in Guasaganda Parish, which is located 30 km north of La Maná Canton Cotopaxi Province, covering an area of 398 square km. It is located at an altitude of 580 meters, with a temperature of 18-24 ° C between geographical coordinates of 0 ° 47 '46 "south latitude and 79 ° 08' 45" west longitude. It was to identify sanitary hygienic characteristics of milk and systems of dairy production, establish quality physicochemical and microbiological analysis of it and realize the economic analysis of farms producing milk, which consisted of 18 randomly farms, of different systems of dairy production on farms (small, medium and large) of Guasaganda Parish. In the present investigation Design will be used completely randomized (CRD) with 6 replicates per treatment to determine differences between treatment means for each period, the multiple range test of Tukey (P ≤ 0.05) was applied. Which were evaluated for pH, acid, fat, total solids, density, ash, protein, somatic cells in physico-chemical analysis and mesophilic aerobic bacteria, E. Coli in microbiological analysis.
