| 要約: | The following research work, focus to the design of a machine, which peel and slice the fruit of green plantain, for the obtaining of flakes (chifle) which are currently performed manually and working long hours on it. It raises three proposals to evaluate different designs using the weighted average method criterion, choosing the best option: SOLIDWORKS SOFTWARE was used during modeling of the proposal, having a proposal approach of the elements needed. The best option must demonstrate efficiency, industrial interest and effective y help the food industry, improving the development and quality of this product in such a way that, the peel and slice machine will contribute to mass production. By applying the method of weighted criteria is selected the alternative "C" as shown in Table 9 in evaluating specific weights of each criterion being this proposal as outstanding prior to design to provide greater reliability in the process, reduce operating time and quality of a finished product unlike the other proposals. In order to design such a machine, similar projects were investigated. Several sources were used, such as: articles and magazines. They are complemented with this work. Comparing the obtained flakes through the artisanal method and the ones made using the machine, it obtain higher production with the team, the better preparation and suitability of food in addition, It provides security to the worker against fingers cuts while performing this work The machine make it´s flakes with a thickness of 1.5mm approximately, obtaining quality and quantity of the product without leaving the safety of the finished product, to meet the demands and needs of the consumer. Handmade industries peel and slice the fruit of the banana, obtaining of flakes in 45 seconds, instead, the alternative "C" presented in this work does this job in 8 seconds, designed and tested with the help of the software Solid Works.
