| Shrnutí: | This experiment was conducted at the Hacienda Maria Bertha owned by Mr. Roque Mendoza located in the Buena Fe, Province of Los Ríos, Km. 22 via Santo Domingo. It lasted 120 days. Given the need to find solutions to improve fruit quality and environmental factors in cultures of banana and plantain (Musa spp.) And researchers use various techniques. To achieve this, it is essential to have an excellent postharvest control. The main objective of this study was to determine the quality of banana fruit (Musa ssp.) William Great variety in different harvest ages. This quality of the fruit 12, 13 and 14 weeks of age was evaluated. Experimental design was completely at random (DCA) with three treatments and five repetitions, as shown in Table 1 to determine differences between treatment means the multiple range test of Tukey (P <0 was used, 05).
