| Résumé: | The growing demands of the market and customers for quality and safe products have generated the food processing industries such as grain trader "SanCamilo" deemed to Good Manufacturing Practices (GMP) as the first link in the chain quality for healthy and safe products with a consequent increase in competitive local and national market. In order to achieve a future implementation of BPM in the company has prepared this manual that is considered an evaluation of the initial condition of the company concerning the GMP currently applied in the company, taking into account national regulations. The manual also contains guidelines, national and international recommendations on aspects comprising the GMP and food hygiene to achieve implementation; complement the manual contains Sanitation Standard Operating Procedures that maintain the cleanliness and hygiene in the plant and also monitor those aspects of GMP that need to be permanently controlled. Finally, considering that the economic factor is an important aspect of an implementation, the manual provides a reference to the estimated costs necessary for implementing economic analysis.
