Calidad microbiológica de la leche de bovinos de doble propósito bajo dos sistemas de ordeño en cuatro cantones de Manabí

This thesis project was conducted in Calceta, Flavio Alfaro, Pedernales, El Carmen cantons of the province of Manabí with collections of samples to develop the analysis of the microbiological quality of the milk and the analyzes were performed in the laboratory of food science at the Faculty of Sciences Livestock La Maria It used a design used completely random (DCA) with 2x4 factorial arrangement deductive method is applied and that the microbiological quality is dependent on good management to be applied in two different milkings whether manual or mechanical. The main objective is to determine the microbiological quality of milk in cattle dual purpose systems in the province of Manabí to identify bacteria Escherichia coli, Total Coliform, Aerobic and Reductase in milk in cattle dual purpose systems in the province of Manabí Assess the management system and appropriate transportation in order to obtain an excellent microbiological quality of milk in cattle dual purpose systems in the province of Manabí. The analysis showed that all samples of milk from 4 different cantons under the system were contaminated milking exceeding quality standards of raw milk Aerobic in the analyzes, total coliforms and reductase in the Canton El Carmen even E.coli bacteria found This shows shortages in health milking process, on the other hand the analysis under the system of milking were better big difference in quality between the village of El Carmen and Calceta, Flavio Alfaro and Pedernales cantons in microbiological analysis showed
