Riassunto:This research was conducted in Guayacán, Puembo and Envidia of La Maná Canton naturally located in the western region of the outer foothills of the Andes, in the province of Cotopaxi Enclosures. Physico-chemical and microbiological composition of raw cow's milk was studied. One Completely Random Design (DCA) was used with 6 replicates per treatment (3 treatments), giving a total of 18 milk samples from different production systems for dairy farms (small, medium and large) and Precinct applied the multiple range test of Tukey (P ≤ 0.05).
