Zusammenfassung:The Andinocara rivolatus, is a kind of native and exclusive freshwater, has been studied for many years in various countries where the species, however, in Ecuador there are few scientific documents, specifically in the area of Quevedo and Its surroundings, the investigations carried out are practically null, resulting in a mismanagement, preservation, and disadvantages at commercial level. This research generates scientific information about the morphometry of the species, the variability according to the zones, methods of ageing and sex, also determines the commercial portion that can be applied for food purposes. In general, the breeding system directly affects the size and weight of the fish, obtaining a higher average for farmed breeders in most evaluated variables, while sex has three variables in length and none for weight, therefore There is no close correlation between shape, size, and sex; The evaluated zones present differences, maintaining a greater margin for certain variables of length and weight in zone 1 (Buena Fe); The old blue obtained a high yield for the by-products and the weight of the gutted fish, being this 70.16 and 79.78% respectively, whereas in the fillet the yield is 29.03%, therefore, it restricts or hinders the use of the fillet for certain processing. It is of paramount importance to generate information and to encourage the study of this species, serving as a tool for the development of technological processes that allow the industrialization of the old blue, in order to extend its useful life time and to disseminate the Consumption not only to rural areas, also urban, being of great interest the fish for its nutritional contribution.
