National, which stand out as having some resistance to pests and diseases and good performance in productivity and quality, conditions which allow the result to be good properties for these characteristics becomes optimum product for the chocolate industry and particularly contribute to the industrial market trend is to identify new flavors and aromas specials. the present research aims to identify and characterize clones of Theobroma cacao variety found in the experimental stage , to determine compliance with the organoleptic characteristics of Theobroma cacao to get within the parameters of quality standards and maintaining the quality of producto.
